Ingredients:
- 1 cup Quinoa
- 2 cups water
- 1 Onion
- Garlic
- Lemon Zest (to taste)
- Lemon Juice
- Olive Oil
- A pinch of salt and pepper
- Thyme, Basil, Parsley (to taste)
Steps:
- Put a little olive oil in a saucepan and heat on medium or a little lower
- Take an onion and chop it up; once the pan is warm, throw in the onions
- Cut a little garlic, add it to the pan
- Cut up your thyme, basil, and parsley as well as any other herbs you choose, and add them to the pan
- After the onions look almost clear, add in a cup of quinoa and two cups of water.
- Add in salt and pepper
- Cover the saucepan and wait for the water to boil; after it does put your stove to the lowest setting
- It will take around ten minutes, or you can tell it is done when all the water is absorbed.
- When it is done, zest one lemon
- Add in lemon juice to your taste, we used about half a lemon
