Quinoa Salad Recipe

Salad composed of quinoa, onions, garlic, several herbs, and lemon. Amounts and ingredients are easily changeable. The water you use to cook the quinoa should be double the amount of quinoa you use.

Ingredients:

  • 1 cup Quinoa
  • 2 cups water
  • 1 Onion
  • Garlic
  • Lemon Zest (to taste)
  • Lemon Juice
  • Olive Oil
  • A pinch of salt and pepper
  • Thyme, Basil, Parsley (to taste)
Steps:
  1. Put a little olive oil in a saucepan and heat on medium or a little lower
  2. Take an onion and chop it up; once the pan is warm, throw in the onions
  3. Cut a little garlic, add it to the pan
  4. Cut up your thyme, basil, and parsley as well as any other herbs you choose, and add them to the pan
  5. After the onions look almost clear, add in a cup of quinoa and two cups of water.
  6. Add in salt and pepper
  7. Cover the saucepan and wait for the water to boil; after it does put your stove to the lowest setting 
  8. It will take around ten minutes, or you can tell it is done when all the water is absorbed.
  9. When it is done, zest one lemon
  10. Add in lemon juice to your taste, we used about half a lemon
